The seeds
Seeds represent the organ of the plant responsible for its propagation, thus indispensable for the survival of the species.
Given the importance of its task, each plant ensures that its seeds can spread by adapting in various ways to the environment in which it lives. For this reason, seeds can come in very different looks. Some seeds, in fact, are very light or have membranes that act as wings or tufts of hairs that can carry them far away by taking advantage of the wind. Others, on the other hand, are covered with spines and hooks so that they attach to the fur of some animals and can be carried passively. Still others, contained in fleshy fruits, are eaten by animals that subsequently disperse them. Others have special shapes, such that they facilitate sinking into the ground (such as cyclamen), or floating on water (such as water chestnut).
The seeds we treat
Whatever the shape of the seed, it consists mainly of nutrient tissue (endosperm), which is rich in reserve substances. It contains carbohydrates, lipids and proteins, in varying proportions depending on the species: in cereals, such as wheat and corn, carbohydrates prevail, while in legumes, such as beans, proteins prevail; lipids, on the other hand, prevail in groundnut, sunflower, rapeseed, etc...
Depending on the processing method, various products can be obtained from the seeds, namely OILS, if subjected to mechanical pressing, or other types of EXTRACTS, if treated instead with water or other extraction solvents.
